You can never have too many salad recipes so here is yet another one to add to your rotation! I love the fall flavors in this salad and how easy it is to throw together (quite literally).
Ingredients
Dressing
* Juice of one orange
* 3 tablespoons lemon juice
* Honey as desired
* Sea salt to taste
* Freshly ground black pepper
For the salad
* 1 large or 2 small heads of iceberg lettuce
* A few rocket leaves
* A handful of halved pecans
* Some feta, cut into ½ inch cubes*
* A guava, cut into thin slices
* An Apple, cut into thin slices
* Some sesame seeds
Instructions
● Make the dressing: In a small bowl, whisk together the orange juice, lemon juice , honey, salt, and several grinds of pepper.
● On a large platter, arrange the iceberg, the rocket, guava, apple, sesame seeds, feta cheese, dried cranberries, and finally pecans (the star of the show).
● Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of sesame and top with some more pecans. Season to taste and serve.
Note
*Feta in brine is best for this recipe.
